Blueberry Strudel “Bitoraj,” an original Gorski Kotar specialty, has been officially protected since 2012. However, that doesn’t mean the recipe for this dessert is a secret. The “secret” lies in the ingredients. Among them is breadcrumbs made from three types of bread produced only at the Bitoraj restaurant, as well as a special type of blueberry. To achieve that authentic flavor that is unforgettable, you should use exclusively forest fruit.
Challenge or Advantage
Gorski Kotar has always been a poor region, and its residents had to make do with what they had. However, they turned this challenge to their advantage. The Gorski Kotar cuisine is unique because it is based on local ingredients, and the famous blueberry strudel is no exception.
For years, this traditional dessert had been somewhat forgotten, but the Kauzlarić family brought it back to the gastronomic scene. First at the Fužine bistro “Tren” and later at the restaurant “Bitoraj,” which gave the acclaimed strudel its name. Not only did the guests immediately fall in love with the strudel, but it also received accolades from experts. Thanks to this delicious specialty, the Bitoraj hotel and restaurant received the Sunflower of Rural Tourism award.
From Our Ancestors’ Oven
So, the treat on which generations of Gorski Kotar residents grew up has also become one of the most recognizable symbols of Gorski Kotar in Croatia and around the world. The “secret” of the strudel lies in its recipe, which is hidden in the genes of Gorski Kotar’s cooks. The Kauzlarić family has refined and improved the traditional recipe, but their strudel still comes from “our ancestors’ oven.” They have retained the original recipe, local ingredients, and even the way it is made and served.
Namely, you should taste the strudel hot, right out of the oven. While it captivates with its intoxicating aroma, which simultaneously reminds you of the freshness of the forest and the warmth of your grandmother’s kitchen. That is truly a taste you won’t forget. Because once you try blueberry strudel, you forever remember the flavor of Gorski Kotar.
