All of this is nature’s legacy to the Gorski Kotar people. However, this beauty has its flip side. The tough and “stingy” land, along with long and cold winters, shaped the local specialties. The challenging living conditions of the Gorski Kotar people demanded hearty and satisfying food. Living in harmony with nature guaranteed that this food was healthy and locally prepared.

Blood sausages, sausages, bacon…

Meat forms the basis of every Gorski Kotar lunch. Sometimes, there were game specialties or wild game on the table. However, such opportunities were rare in winter. Therefore, resourceful and thrifty housewives prepared products that could last for a longer time. Alongside tasty homemade sausages and fragrant bacon, a special delicacy is the unique Gorski Kotar blood sausages, which were made during the preparation of long-lasting meat products.

However, each region has its specific and unique way of making this delicacy. Gorski Kotar also has its “little secret” that gives these blood sausages a special flavor in this area, and that secret lies in the quality of the meat and the ideal blend of spices!

However, it is especially popular during the colder, winter days. When darkness falls early over Fužine, it’s ideal to welcome it by the fireplace with a plate full of homemade specialties. As a menu item, the Gorski Kotar lunch includes sausages, ribs, bacon, cabbage, and potatoes. A heartier option is the Gorski Kotar platter for two. In addition to bacon, ribs, cabbage, and potatoes, it also includes homemade sausages and blood sausages. Of course, blood sausage enthusiasts can order this specialty as a standalone dish, with a choice of being boiled or roasted.
